Akvavit or aquavit (lat. aqua vitae-living water) is a Scandinavian alcoholic drink alcoholic drink produced by fermentation of potato raw materials with subsequent distillation of the resulting product, its purification and aromatization with spices and herbs. Aquavit is produced on the basis of alcohol obtained by processing potatoes. Potatoes are boiled in a cooking autoclave resembling a pressure cooker. The resulting starch mass is then mixed with malt grain. After yeast fermentation should be double distillation, resulting in a high purity alcohol, which is diluted to the desired strength and passed through charcoal, adding flavoring ingredients.
